Curried Fried Potatoes

Categories: potatoes

2 cups baked potatoes -- diced
2 tablespoons butter
1 teaspoon curry powder -- or to taste

Dice the precooked potatoes (or dice and nuke until tender)
Brown the potatoes in the butter adding curry powder in last five minutes.

Damsel,

I'm glad you liked the curried potatoes. When I read your post I was reminded of another dish you might like. I think that I posted this before but just in case...

Rice Cakes

When I was a youngster my Mom used left over mashed potatoes to make Potato Cakes. Mashed potato's, onion, salt, pepper and egg, fried like pancakes.

I don't eat mashed potatoes much anymore but I eat a lot of rice and always make too much. I thought of the potato cakes one day as I wondered what to do with the left over rice. The results were great and when I shared them with my bridge partner she stopped griping about cooking too much rice and insists on her share of the rice cakes.

3 c left over rice
1 onion minced
2 to 3 eggs
1/2 tsp. dill
1/4 c grated parmesan cheese
1/2 tsp. fresh cracked pepper
oil for frying

This is the basic list of ingredients, you can add other spices to suit your taste. Curry is good, so is rosemary. Garam Masala is great.

Mix all ingredients and let set 15 min. Drop by big spoon onto hot oiled non stick surface. Flatten with spoon back and fry until brown on each side.
