Anyone have a recipe for the classic DELI style potato salad (mayo base, not mustard base)....

Boil,peel and cut into 1/2" cubes, l gallon potatoes
Boil,peel and mash by hand into 1/2" cubes another gallon of potatoes
Add 4C chopped onion
Add 6C sweet relish,drained
Sprinkle with 3TBS of salt
(I think you will find salad dressing to give a better flavor than mayo but that is your choice)
Add salad dressing(should take about 1/2 gallon) but don't add all at once or it may be to wet.
Add egg shade(yellow food color) as necessary for a pleasing color(usually about 1TBS)
I like to mix it all togather and store in gallon glass jars for a couple of days to let the flavors come togather. When you mash the second gallon of potatoes by hand it gives the overall dish a nice creamy texture

Potato Salad

4 medium red potatoes
1 rib celery, diced
1 carrot, diced
1 small onion, minced
2 T. mayo
1 T. white vinegar
Salt, pepper to taste
Chopped parsley

Boil potatoes about 20 minutes, until tender. Cool. Leaving skins on, cut in large chunks.

Fold in all the other ingredients. Serve at room temperature or chill.

Makes 2 generous portions or 3-4 small side portions.

Note: You can also add chopped green or red pepper to this.
