I like to take new potatoes, mix them in a bowl with olive oil, salt/pepper, fresh herbs, then roast them in a 400 degree oven until tender. Near the end I sprinkle parasean cheese over them. Damn, they are good.

I got to thinking, what kind of sauce would go well with this? I was thinking of some simple lemon butter. Any other suggestions?

1 tablespoon vegetable oil
1 medium onion, chopped
1 clove garlic, finely minced
1 cup chicken broth
Salt to taste
1/2 teaspoon freshly ground pepper

Heat a large skillet over medium-high heat; add oil. Sauté onion and garlic for 5 minutes or until tender. Add broth; mix well. Bring to a boil.

Remove potatoes to serving bowl. Add pepper to skillet; stir. Pour sauce over potatoes and serve.

It sounds like you should leave them alone and continue making them without sauce. They sound so yummy, why would you want to ruin a good thing. "If it aint broke, why fix it?"

Agreed. I just thought I'd try something different.

I was thinking of a honey mustard vinaigrette but that's probably overkill. hehe

I love honey mustard vinaigrette, but I agree with you, I think that might be overkill.
You really sound like you have a good thing going with your original recipe.
I think I'll give it a try, soon.

Lemon butter might be nice, but a sauce is really not needed.
Heinz ketchup for dipping might be nice too! :)

Try using a great classic italian dressing..it has all the ingredients..also a great marinade.

I don't think they would need a sauce - they would taste great just as they are.

Sometimes I like to put a sauce on taters like this just to wet them. Butter/Cream sauce containing the same type of herbs used in roasting would be my usual. Usually dill.
