Here's a family favourite - there are a number of versions around - this is one we have used for some time. Enjoy!

Peter's Garlicy Potato Puffs

Serves 4

You can vary the Garlic to taste - men usually like this following mixture but it may be too strong for ladies.

2 1/2 cups mashed potatoes
1 cup mashed parsnip
11/2 tablespoons butter, melted
1 clove garlic, finely minced
1 tablespoon flour
2 Tbs either Potato starch (preferred) or Corn starch
Salt and Pepper to taste
1/8 tsp Dry Mustard
2 eggs beaten
1 tablespoon chopped parsley - more if wished
Little milk to dampen the mix slightly

Filling:
2 Tbs finely chopped chives
2 Tbs light sour cream
1/8 tsp Celery Salt

Pre-heat oven to 425°F.
Add the minced garlic to the melted butter and allow to stand until needed.
Add all remaining ingredients to the potatoes (reserving a little of the egg for the wash) and mix well.
Add a little milk to the mix if needed - it should be stiff enough to retain the heap reasonably high.
Pile a heaped Tbs onto a greased baking sheet - this amount will make about 8 piles.
Keep your finger wet and make a crater in the top of each pile with your wet finger.
Mix the chives and sour cream and add a teaspoon of this mix into each crater.
Brush with beaten egg wash.
Light sprinkle of paprika if wished.
Bake in the oven for about 10 to 12 minutes, or until golden brown. Brown the tops with the grill if necessary.
