I'm planning to make some twice-baked potatoes (potato skins filled with mashed potatoes with cheese, etc) for Thanksgiving. I'm wondering if they can be made in advance. If yes, how far in advance?

Yes... months in advance when kept frozen.

They sell them frozen in the supermarkets...so.....I think the answer is YES and well in advance. Leave time to thaw before re-baking.
