Subject: How do you make a potato bed?

Ok- I have a question about how you make an essentially sauteed skillet
fried potato bed. The recipes says to shred the potato using a potato
ricer with enough water in the bowl to cover the potato then dry in
paper towel and cook with medium heat in a skillet. Should the potato
be cooked first or should it be uncooked? It is a really interesting
idea so I will leave the link for anyone who is interested. Hope
someone can help me out with the answer. Thanks!

From the context of the directions, I think you are supposed to coarsely grate
raw potatoes. Otherwise, the soaking and rinsing don't make any sense. The
part about using a potato ricer is obviously an error.

Potato nests are normally made from raw potatoes. I don't
think I'd have the hand strength to shred a raw potato by
pushing it through a typical ricer, but I suppose other
people could.
You could shred the potatoes in a food processor. The cold
water is to prevent discoloration and to remove some of the
starch.
